Scientists have discovered a way to do just that.

While their tricky technique has only been applied to off-tasting cabernet sauvignon so far, they say the method could be applied to other varieties to make all wines with strange aromas or flavors more drinkable.

They’ve even created a whole center full of wine scientists in Adelaide, Australia to specifically tackle issues in the wine industry.

At the center, wine taste-testers are roped in to prove their techniques work and the tasters agreed that the latest technique did in fact work. Not only did it make the cab sav taste better, but it preserved its distinct aroma.

The scientists from the University of Adelaide used tiny magnetic particles to remove the off-tasting substances in cab sav without altering its desired bouquet.

All wines naturally contain substances that contribute to their distinctive flavors and aromas. One group of these substances produces vegetable-like aromas in certain varietal wines such as cab sav.

In excessive amounts, these aromas can overwhelm the fruity or floral bouquet that connoisseurs have come to expect from wine, “resulting in unbalanced sensory characteristics”.

Wine scientist David Jeffery said these off-putting aromas and flavors often arose in grapes harvested early or grown in cool climates.

Jeffery said winemakers had unsuccessfully tried to address the problem by using additives such as activated charcoal and deodorized oak chips.

He said with one possible alternative being to use polymers, the research team set out to see if attaching magnetic nanoparticles to polymers would allow them to “isolate and sop up these substances,” easily removing them from wine.

The study, published in the Journal of Agricultural and Food Chemistry, found magnetic polymers removed the compound more effectively than other methods in cab sav that produces a strong green bell pepper aroma.

Jeffery said there was potential for this to be applied to other wines.

“There’s a lot of work still to be done for this to be allowed to be used in the winemaking process,” he said.

“We’ve only focused on the green capsicum compound but there’s other off aromas or smoke taints from bushfires, or cork taint.”

“The polymers would need to be designed to especially remove those other things, and they could.”

Jeffery said the aromas were found in other varieties such as sauvignon blanc.

“These are normal compounds in the grapes but depending on whether there’s a cool climate or they’re picked early these aromas could be dominating,” he said.

“People are looking for this green character but if it’s out of balance that becomes a problem.”

The Australian Research Council (ARC) Training Center for Innovative Wine Production was originally created to find ways to decrease the alcohol levels in wine.

Researchers found while picking grapes earlier lowered their sugar content, they then produced more green characteristics, which led them to this latest project.

“Economically it’s a big thing for Australia and research drives a lot of innovation,” he said.
